While people have been cooking with cannabis for many years now, (“magic” brownies, anyone?) using CBD products is a relatively new way to spice up tried and true recipes while adding some pretty important health benefits.

Guacamole 

This is an easy guacamole recipe, one that not only combines the health benefits of CBD oil but also provides all the goodness avocados bring to the table.
  • 3 ripe avocados, peel, cut in half and remove the seed
  • 2 tomatoes, diced
  • ½ medium red onion, diced
  • ¼ cup chopped cilantro leaves
  • ½ jalapeno pepper, chopped (optional)
  • 1 tbsp lime juice
  • ½ tsp ground cumin
  • ½ tsp salt
  • ¼ ground cayenne pepper
  • 1 minced garlic clove
  • 1 tbsp CBD oil
  • salt and pepper to taste
Mash the avocados in a medium bowl until chunky or creamy, whichever you prefer. Add the other ingredients and stir until well mixed. Guacamole is best served immediately with tortilla chips or use to top tacos, nachos, grilled salmon or mix in with tuna for a new twist to that plain old tuna salad sandwich.

Infused CBD Butter

Making your own CBD infused butter is simple and is a great staple to keep on hand.
  • 2 cups butter, salted or unsalted, you decide
  • 1 cup water
  • ¼ cup CBD oil
Cut the butter into small pieces and place in heavy saucepan along with the water and CBD oil. Stir. Cover and cook over very low heat for 2 hours, stirring occasionally until the butter is completely melted and all the ingredients are blended together. Let cool then pour into an airtight container and refrigerate. Use in place of regular butter.

Parmesan Mashed Potatoes

After you try these super yummy and super creamy mashed potatoes, make sure to bookmark this post so when Thanksgiving rolls around you’ll have this recipe handy.
  • 5 pounds potatoes, peeled, cut into small pieces and boiled until tender
  • ¾ cup infused butter softened
  • ¾ cup sour cream
  • ½ cup grated Parmesan cheese—fresh is best—but whatever you do, don’t use the stuff in the green shaker can
  • ¾ cup warmed milk
  • 1 teas pepper
  • 1 teas salt
  • 1 ¼ teas garlic powder
  • 2 tbsp minced fresh parsley
Boil potatoes in a heavy pot. When tender, drain and return to the pot. Over low heat, stir the potatoes to remove any remaining liquid. Remove from the burner then mash. Stir in next 7 ingredients, adding more milk if necessary to reach desired consistency. Gently mix in parsley. Serve immediately. No gravy required.

Easy Fruity Smoothie Bowl 

  • ½ cup granola
  • ¼ cup frozen strawberries
  • ¼ cup frozen blueberries
  • ¼ cup frozen mango pieces
  • ½ banana
  • 1 dropper CBD oil
Using the smoothie or puree setting combine the frozen strawberries, blueberries, mangos and CBD oil in a blender. Fill a bowl with granola and top with smoothie mixture. Add banana slices and breakfast is served.

Penne Rosa 

This Penne Rosa tastes great, has lots of healthy ingredients and the leftovers, if there are any, reheat beautifully.
  • 12 ounces cooked whole wheat penne pasta
  • 4 cups fresh spinach
  • 2 medium sized tomatoes, chopped
  • 8 ounces sliced button mushrooms
  • 1/3 cup plain Greek yogurt
  • ½ cup marinara sauce
  • 4 cloves minced garlic
  • 1 tbsp olive oil
  • 1 pinch crushed red pepper flakes
  • ¼ cup grated parmesan cheese
  • 2 tbsp CBD oil
  • salt and pepper to taste
Using a large skillet with a lid, heat the olive oil then add the garlic and red pepper flakes. Cook about 2 minutes. Add the tomatoes, mushrooms, salt and pepper. Cook until the mushrooms begin to release their water and start to steam. Tear the spinach into bite-sized pieces, add to pan and cover with lid. Let spinach wilt for about 2 minutes. Stir in marinara sauce and remove from heat. While the spinach/marinara mixture is resting, mix the CBD oil with the Greek yogurt and then add to the cooked penne. Pour the yogurt/pasta mix into the pan and toss until the pasta and vegetables are well coated. Top with parmesan and serve while hot.

Chocolate Chip Cookies

No meal is complete without a little something sweet. This recipe is very similar to that super popular one on the back of the semi-sweet chip package. In fact, you can make that recipe with CBD oil by simply substituting one tablespoon CBD oil for one tablespoon of vegetable oil or butter.
  • 1 ¼ cup all purpose flour
  • 6 tbsp granulated sugar
  • 6 tbsp brown sugar
  • ½ teas baking soda
  • ½ teas salt
  • ½ cup infused CBD butter
  • 1 egg, lightly beaten
  • ½ teas pure vanilla extract
  • 1 cup baking chips, these can be white chocolate, semi-sweet, dark chocolate, milk chocolate, butterscotch or butter brickle. Use one, two or mix them all up!
Preheat oven to 375 degrees. Line a baking sheet with parchment paper. In a small mixing bowl blend the flour, baking soda and salt. Set aside. In a large mixing bowl, cream the sugars and butter until light and fluffy. This will take around 2 or 3 minutes. Add the egg and vanilla and beat until mixed. Slowly add the dry ingredients. Mix until blended. Add the chips, stirring by hand until evenly mixed throughout the batter. Scoop tablespoon sized balls evenly on the baking sheet and gently flatten with your hand. Bake 10 minutes, checking frequently during the last couple of minutes to make sure they aren’t too brown. Cool on the baking sheet for a couple of minutes before removing to a cooling rack.  If possible, let cool until able to eat without burning your tongue, then pour yourself a big glass of milk and enjoy!
